I haven't done offline wiki editing. However, as with almost any idea
that seems both possible in software and a good idea, there are
solutions, at least in the case of MediaWiki. Here's what looks like a
relatively simple one, a project started all the way back in 2004:

Other packages listed here

might provide offline support. I don't know.
